Spinach Mushroom Quesadillas (Printable Format)

# Ingredients You'll Need:

01 - 8 medium flour tortillas
02 - 2 cups fresh spinach
03 - 2 cups sliced mushrooms
04 - 1 cup shredded mozzarella cheese
05 - 1 cup shredded cheddar cheese
06 - 2 tbsp olive oil
07 - 2 cloves garlic, minced
08 - 1/2 tsp paprika
09 - Salt and pepper to taste

# How to Make It:

01 - Heat 1 tbsp olive oil in a skillet over medium heat. Add mushrooms, garlic, paprika, salt, and pepper. Cook for 5 minutes until tender. Add spinach and cook until wilted. Remove from heat.
02 - Place tortillas on a baking sheet. Sprinkle half of the cheese on one side of each tortilla, add mushroom-spinach mixture, then top with remaining cheese. Fold tortillas in half.
03 - Preheat oven to 400°F (200°C). Brush tortillas with remaining olive oil. Bake for 10–12 minutes, flipping halfway, until golden and crispy.
