Heat 1 tbsp olive oil in a skillet over medium heat. Add mushrooms, garlic, paprika, salt, and pepper. Cook for 5 minutes until tender. Add spinach and cook until wilted. Remove from heat.

Place tortillas on a baking sheet. Sprinkle half of the cheese on one side of each tortilla, add mushroom-spinach mixture, then top with remaining cheese. Fold tortillas in half.

Preheat oven to 400°F (200°C). Brush tortillas with remaining olive oil. Bake for 10–12 minutes, flipping halfway, until golden and crispy.

Slice and enjoy warm with salsa, sour cream, or guacamole!
