Preheat the oven to 190°C (375°F). Line a baking sheet with parchment paper.

In a small bowl, combine the pumpkin puree, brown sugar, maple syrup, and pumpkin spice until smooth.

Unroll crescent dough on a cutting board. Cut the dough in half to create two identical rectangles and place them side by side.

Spread the pumpkin mixture evenly over one rectangle of dough. Place the second rectangle directly on top, aligning all edges to create a sandwich.

Using a pizza cutter, slice the layered dough into strips approximately 2cm (3/4 inch) wide.

Transfer strips to the prepared baking sheet. Twist each strip by picking up one end and rotating it twice, then repeating with the other end for 2-3 more twists.

Brush each twist generously with melted butter. Combine sugar and cinnamon in a small bowl, then sprinkle the mixture evenly over the twists.

Bake for 8-11 minutes until golden brown. Allow to cool slightly before serving with whipped cream if desired.
