# What You Need:

01 - 1 lb fresh chow mein noodles
02 - 2 cups thinly sliced cabbage
03 - 1 cup sliced celery
04 - 1 small onion, sliced
05 - 2 tablespoons vegetable oil

→ Noodle Sauce

06 - 2 tablespoons regular soy sauce
07 - ½ tablespoon dark soy sauce
08 - 2 tablespoons oyster sauce
09 - 1 tablespoon sesame oil
10 - 2 garlic cloves, minced
11 - ¼ cup low-sodium chicken stock
12 - ½ tablespoon cornstarch

# How to Make It:

01 - In a small bowl, combine all noodle sauce ingredients and set aside.
02 - Bring a large pan filled halfway with water to boil on medium-high heat. Blanch chow mein noodles for 20-30 seconds until loosened.
03 - Strain the noodles in a colander and set aside. Do not rinse with water.
04 - Heat 1 tablespoon vegetable oil in a large pan. Stir-fry onions, cabbage and celery until softened, about 1 minute.
05 - Push vegetables to the side of the pan. Add remaining oil into empty space, then add noodles and sauce.
06 - Toss everything together until noodles are evenly coated in sauce. Remove from heat and serve immediately.

# Additional Tips:

01 - For a vegetarian version, substitute chicken stock with vegetable broth and oyster sauce with vegetarian stir-fry sauce.
02 - Fresh chow mein noodles work best, but dried can be substituted following package cooking instructions.
