Chicken Bacon Broccoli Casserole (Print-Friendly Version)

A adaptable low-carb meal with chicken, bacon, and vegetables in creamy ranch sauce, perfect for customizing with ingredients on hand.

# What You Need:

→ For the casserole

01 - 4 cups diced or shredded cooked chicken breast
02 - 8 slices cooked and chopped bacon
03 - 5 cups broccoli florets OR 1 pound thawed frozen spinach (well-drained)
04 - 3 cloves minced garlic
05 - 1 cup ranch dressing
06 - 1/2 cup shredded mozzarella cheese
07 - 1/2 cup shredded cheddar cheese

→ For the topping

08 - 1/2 cup shredded mozzarella cheese
09 - 1/2 cup shredded cheddar cheese

# How to Make It:

01 - Ensure all ingredients are prepped - chicken cooked and diced, bacon cooked and chopped, and broccoli cut into florets (or spinach thawed and well-drained).
02 - In a large mixing bowl, combine the chicken, bacon, broccoli or spinach, and minced garlic.
03 - Pour the ranch dressing over the mixture and add 1/2 cup each of mozzarella and cheddar cheese. Stir until thoroughly combined.
04 - Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.
05 - Sprinkle the remaining 1/2 cup each of mozzarella and cheddar cheese over the top of the casserole.
06 - Bake in a preheated 375°F (190°C) oven for 20-25 minutes until the cheese is melted and bubbly and the casserole is heated through.
07 - Allow to cool slightly before serving.

# Additional Tips:

01 - This casserole is adaptable based on what you have available. You can substitute rotisserie chicken or turkey for chicken breast, and turkey bacon works well too.
02 - The cheese combination is flexible - while mozzarella and cheddar create a nice mix, you could use other melting cheeses like provolone, Monterey Jack, or Colby.
03 - If you prefer not to use ranch dressing, try a mixture of mayonnaise and sour cream with Italian seasoning.
04 - For vegetables, fresh spinach can replace frozen (cook it down first), and cauliflower or Brussels sprouts can substitute for broccoli while maintaining the low-carb profile.
