Greek Cucumber Salad (Print)

# Ingredients:

→ For the Salad

01 - 2 cucumbers
02 - 4 roma tomatoes
03 - 1 cup sliced red onions
04 - 1/2 cup crumbled feta
05 - 1/2 cup black olives, drained and halved

→ For the Greek Lemon Vinaigrette

06 - 1/4 cup olive oil
07 - 1/4 cup fresh lemon juice
08 - 2 teaspoons dried oregano
09 - 2 teaspoons pure maple syrup or honey
10 - 2 cloves garlic, minced
11 - 1/2 teaspoon salt
12 - 1/4 teaspoon black pepper

# Directions:

01 - In a small bowl, combine olive oil, lemon juice, dried oregano, maple syrup, minced garlic, salt, and black pepper. Mix well until emulsified.
02 - Slice cucumbers, tomatoes and red onions. Drain black olives and slice them in halves. Add everything into a large bowl with enough room for tossing.
03 - Drizzle the prepared vinaigrette over the vegetables and toss gently to combine. Sprinkle with crumbled feta cheese.
04 - Serve immediately or chill briefly before serving for best flavor.
