Fruit Pizza Cookie Crust (Print)

A delightful sugar cookie crust topped with cream cheese frosting and colorful fresh fruit arrangements for a crowd-pleasing dessert.

# Ingredients:

→ Base

01 - 16 oz refrigerated cookie dough, softened at room temperature for 1 hour

→ Frosting

02 - 8 oz cream cheese, softened to room temperature
03 - 2 Tbsp unsalted butter, softened to room temperature
04 - 2 tsp vanilla extract
05 - 2 cups powdered sugar

→ Fruit Topping

06 - 1 ½ cups sliced strawberries
07 - 2 kiwis, skin removed and sliced
08 - ½ cup blueberries
09 - 9 oz canned mandarin orange sections, drained and pat dry

# Directions:

01 - Preheat the oven to 350℉. Spray a round pizza pan with non-stick cooking spray or line with parchment paper. Use the palm of your hand and fingertips to press the softened cookie dough out into the shape of the pizza pan.
02 - Place in the oven and bake for 15 minutes or until golden brown. Remove from oven and let cool completely before adding frosting.
03 - In a large bowl, beat softened cream cheese, softened unsalted butter, powdered sugar, and vanilla extract. Use a hand mixer until the mixture turns smooth and creamy after 2-3 minutes.
04 - Spread the cream cheese frosting on the cooled sugar cookie with a spatula. Leave a little bit of cookie exposed around the edges.
05 - Wash and slice the fruit. Arrange in concentric circles, starting with the outer edge and working inward until you reach the center.
06 - Serve immediately or place in the refrigerator until ready to serve. Slice using a knife or pizza cutter.

01 - Pat fruit dry before decorating to prevent moisture from seeping into the frosting
02 - Cool crust completely before frosting to prevent melting
03 - Use only fresh fruit—no frozen as they release too much moisture
