Creamy Roasted Cherry Tomatoes (Print-Friendly Version)

Silky smooth tomato soup featuring oven-roasted cherry tomatoes, fresh basil and cream for a delicious homemade comfort dish.

# What You Need:

01 - 2 1/4 lbs cherry tomatoes
02 - 1/4 cup extra virgin olive oil
03 - 4 cloves garlic
04 - 1/4 cup basil leaves or 1 tsp dried basil
05 - 3/4 tsp salt or to taste
06 - pepper to taste
07 - 1/4 cup heavy cream
08 - 1 cup vegetable broth or chicken broth, heated

# How to Make It:

01 - Preheat oven to 425°F (220°C).
02 - Add tomatoes, garlic and olive oil to a baking dish. Toss to coat tomatoes evenly with oil.
03 - Bake for 35 minutes until tomatoes are soft and slightly charred. Allow to cool for 10 minutes before proceeding.
04 - Transfer roasted tomatoes with cooking oil to a blender. Add heated broth, basil, salt, pepper and cream. Blend on low speed until smooth, approximately 30-60 seconds.

# Additional Tips:

01 - If you prefer to remove tomato skins, strain the tomatoes before adding cream, broth, basil, salt and pepper.
02 - Store in an airtight container in the refrigerator for up to three days for maximum freshness.
