# What You Need:

01 - 1½ lbs flank steak or ribeye, thinly sliced
02 - 1 tablespoon olive oil
03 - 1 teaspoon salt
04 - ½ teaspoon black pepper
05 - ½ teaspoon smoked paprika

06 - 12 slider buns or Hawaiian rolls, halved
07 - 1½ cups shredded mozzarella or provolone cheese
08 - 1 small red onion, thinly sliced
09 - 1 jalapeño, thinly sliced
10 - 2 tablespoons fresh chopped parsley

→ Cowboy Butter

11 - ½ cup unsalted butter, melted
12 - 4 cloves garlic, minced
13 - 1 tablespoon Dijon mustard
14 - 1 tablespoon lemon juice
15 - ½ teaspoon crushed red pepper flakes
16 - 1 teaspoon paprika
17 - 1 tablespoon fresh chopped parsley
18 - ½ teaspoon salt
19 - ¼ teaspoon ground black pepper

# How to Make It:

01 - Preheat a grill or skillet to medium-high heat. Season the steak slices with salt, pepper, and smoked paprika.
02 - Heat olive oil in the pan, sear steak in batches for 1–2 minutes per side until just cooked. Set aside to rest.
03 - In a small bowl, mix all Cowboy Butter ingredients. Keep warm.
04 - Lightly toast slider buns if desired.
05 - Layer seared steak, cheese, red onion, and jalapeño slices on the bottom half of each bun.
